2 cups fresh green beans, ends removed, cut into 1-inch pieces

1 16-ounce can garbanzo beans, drained and rinsed

1 16-ounce can kidney beans, drained and rinsed

½ cup yellow bell pepper, chopped

¼ cup red onion, chopped

2 tablespoons fresh parsley, chopped

DRESSING:

½ cup sugar

½ cup vinegar

¼ cup extra-virgin olive oil

½ teaspoon salt

½ teaspoon lemon pepper

In a large salad bowl, combine the beans, bell pepper, onion, and parsley. In small bowl combine all the ingredients for the dressing and stir well until the sugar dissolves. Pour the dressing over the salad. Cover and refrigerate overnight, stirring several times.

MAKES 10 TO 12 SERVINGS
